Makes 8 servings.
Ingredients:
- 1 Cup Yellow Cornmeal
- 1/2 Cup All Purpose Flour
- 3 Tbsp Sugar
- 2 Tsp Baking Powder
- 3/4 Tsp Salt
- 3/4 Cup Canned Creamed Corn
- 1/4 Cup (1/2 Stick) Unsalted Butter, melted, cooled slightly
- 1 Egg, large, beaten to blend
Directions:
Position rack in center of oven; preheat to 400°F.
If you have a small cast iron skillet, that is the best possible thing to bake this (and most other things) in. If not, butter an 8-inch square baking pan.
Whisk all dry ingredients except sugar in a large bowl to blend.
Whisk the egg and the sugar together until dissolved.
Add the other wet ingredients and combine with whisk. Stir into the dry ingredients just until blended. Spoon batter into pan.
Bake until edges begin to pull away from pan sides and tester inserted into center comes out clean, about 20-22 minutes. Cool in pan on rack.
