This is a good accompaniment to fish, or anything that would be completed by subtle lime flavor. Usually I serve this with Panko-crusted Basa with Sriracha.

Ingredients:
1/2 cup uncooked white rice (can be long grain or short grain)
1 1/4 cup water
1 tbsp margarine or butter
1/4 tsp salt
1 tbsp lime juice
1 tbsp Gold Tequila
1/2 tsp cilantro (dried)
Instructions:
Combine all ingredients in an 8 qt saucepan and bring to a boil. Lightly stir, cover and reduce head to medium-low. Simmer about 15 minutes until all of the water is absorbed but the rice is still moist. Remove from heat and let rest 5 minutes. Fluff with a spoon and serve.
