Makes 8 – 10 pancakes.
- 1 1/4C flour
- 1 egg (separated)
- 1 1/4C buttermilk
- 1/4C sugar
- 1t baking powder (heaping)
- 1t baking soda
- 1/4C oil
- Pinch of salt
Preheat skillet and film with nonstick cooking spray.
Beat egg white separately until stiff but not dry. Mix all other ingredients together, then fold in egg white.
Ladle approximately 1/3 C of the batter at a time into the hot griddle. Cook until golden brown, flipping when edges harden.
