A great way to use up a couple bananas!
Cook Time:

- Makes 10 muffins
Ingredients:
- 1 cup + 1 tbsp all purpose flour
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp salt
- 2 bananas, mashed with 1 tsp lemon juice
- 1/2 cup sugar
- 1 egg
- 4 tbsp butter, melted
Preheat oven to 375▫ and lightly grease 10 muffin cups. In a large bowl, mix together flour baking soda, baking powder and salt. In another bowl, mix together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened (do not over mix). Spoon the batter into prepared muffin cups and sprinkle with cinnamon and sugar. Bake in preheated oven for 18-20 minutes, or until the tops bounce back or a toothpick comes out clean. Freezes well.
